Tortilla Soup

Tortilla Soup


2 TBS oil
1 tsp fresh chopped cilantro
2 cloves garlic, minced
6 cups chicken broth
1 onion, chopped
juice of two limes
1 (28oz) can peeled, chopped tomatoes w/ juice
½ tsp pepper
½ cup diced green chiles
1 tsp salt
1 jalapeno, seeded & chopped
tortilla chips
1 lb cooked, diced chicken
grated cheddar cheese


In large pot sauté garlic and onion in oil until onion is tender. Add tomatoes, green chiles, jalapeno, and chicken. Cook for 5 min. Add chicken broth, lime juice, cilantro, pepper, and salt. Cook 30 minutes. Place tortilla chips in bottom of bowl and pour soup on top, garnish with cheese.
