Ingredients:
2-1/2 cups flour
2/3 cups cream of wheat (dry)
2/3 cup sugar
2 tsp baking soda
2 tsp baking powder
1 tsp salt
3 cups buttermilk
2 eggs, slightly beaten
1/2 cup oil
Directions:
Mix dry ingredients. Add the rest of the ingredients and mix until moist.
Buttermilk Syrup
Ingredients:
2 cubes butter (1/2 pound)
1-1/2 cups sugar
1 cup buttermilk
2 tsp baking soda
2 tsp vanilla
Melt butter. Mix in sugar and buttermilk until the sugar is dissolved. Make sure it is just under the boiling point before removing from heat and adding baking soda and vanilla. Make in a big pot as the volume will increase.
Buttermilk Substitute
Ingredients:
Milk (just under one cup)
1 TB white vinegar or lemon juice
Directions:
1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.
2. Add enough milk to bring the liquid up to the one-cup line.
3. Let stand for five minute. Then, use as much as your recipe calls for.
