Cheddar & Cranberry Cheese Ball

Cheddar & Cranberry Cheese Ball

Ingredients:

1/3 stick of butter, softened
1 pkg cream cheese, softened
2 tsp lemon juice
a couple dashes salt
1 dash pepper
8 oz finely grated cheddar cheese
1 cup dried cranberries

Directions:

With an electric mixer, mix butter, cream cheese, lemon juice, salt and pepper until well combined. With big spoon or spatula, stir in cheddar cheese. Form into a ball with your hands, and roll in cranberries to coat. Serve with crackers.

Variations: roll into 1" mini balls, use varied toppings such as pine nuts, chives, slivered almonds, poppy seeds, sesame seeds, pecans, pistachios, paprika, chopped parsely, etc.
