Substitutions & Equivalents

Substitutions & Equivalents:

1 lb butter = 2 cups
2 cups sugar = 1 lb
2 1/2 cups brown sugar = 1 lb
1 1/3 cups brown sugar = 1 cup sugar
3 1/2 cups powdered sugar = 1 lb
4 cups flour (sifted) = 1 lb
1 oz chocolate = 1 square
4 TBS cocoa + 2 tsp butter = 1 square chocolate
1 cup egg whites = 8-10 eggs
1 cup egg yolks = 12-14 eggs
16 marshmallows = 1/4 lb
1 TBS cornstarch = 2 TBS flour (for thickening)
10 graham crackers = 1 cup fine crumbs
1 cup cream = 2 cups whipped cream
1 cup evaporated milk = 3 cups whipped milk
1 lemon = 3-4 TBS juice
1 orange = 6-8 TBS juice
1 cup uncooked rice = 3-4 cups cooked rice
1 cup buttermilk = 1 cup milk + 1 TBS vinegar or lemon juice
