Spicy Southwest Coleslaw

Spicy Southwest Coleslaw


3 c shredded cabbage
1 carrot, shredded
1 onion, diced
1 red bell pepper, diced
1 jalapeno pepper, seeded/diced
1 tbsp chopped fresh cilantro
1/2 c canola oil
2 tbsp apple cider vinegar
1 tbsp sugar
1 tsp cayenne pepper
salt & pepper to taste


Combine cabbage, carrot, onion, red pepper, jalapeno & cilantro. Whisk together oil, vinegar, sugar, cayenne pepper, salt & pepper. Pour over vegetable mixture & toss to combine. Cover & refrigerate for at least 1 hr.

Serve on Cilantro Citrus Chicken!
