Lemon Bars

Lemon Bars


1 cup butter
1/2 cup powdered sugar
2 cups flour
1 pinch salt
4 eggs
2 cups sugar
4 TB flour
1/4 cup lemon juice


Preheat oven to 325 degrees and grease a 13 x 9 pan with butter or cooking spray.

For the crust: Beat together butter and sugar. Add flour and salt and continue mixing just until dough comes together. Press into greased pan. Cook 18-20 minutes on center rack of oven.

For the filling: While your crust is baking, combine eggs and sugar. Fold in flour and lemon juice. Pour over par-cooked crust. Continue baking an additional 20 minutes or until filling is set. Cool on wire rack; then, cut into squares.
