Egg Rolls

Egg Rolls

Ingredients:

5 raw carrots, shredded
salt and pepper to taste
2 eggs about
2 TBS soy sauce
1 med onion, chopped
1-½ cup water
1 section bean threads
40 egg roll wrappers
2 lb ground beef or pork

Directions:

Cook meat, carrots, onion. Add salt, pepper and soy sauce. Drain well & make somewhat dry; add 1 egg to mixture. Boil water and cook bean threads. Drain and add to meat mixture. Put 1 heaping TBS in each egg roll wrapper. Roll up and make sure ends are tucked in. Dip edge into beaten egg to seal. Deep fry, makes about 40.
