Black Bean Feta Salad

Black Bean Feta Salad

Ingredients:


2-3 big handfuls baby arugula (or other salad greens)
3 cups black beans
1/4 cup feta, crumbled
1/3 cup sliced almonds, toasted

Dressing:
2 TB fresh lime juice
1 TB white wine vinegar
1 TB honey
1/2 small jalapeño, seeded and chopped
1/2 tsp fine grain sea salt
1 small garlic clove
1/2 tsp mustard
1/4 cup extra virgin olive oil

Directions:

Toss ingredients. Make dressing. Pour dressing on salad directly before serving.
