Black Bean Confetti Salad

Black Bean Confetti Salad

Ingredients:

1 (15 oz) can black beans, drained and well-rinsed
1/2 red, yellow, green & orange bell pepper, diced
1/4 super-large or 1/2 medium white onion, diced
1 cup fresh cilantro, chopped
1 cup corn
1 avocado, diced

dressing:
1-1/2 TB olive oil
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp honey
dash cayenne
lime juice to fill to 1/4 cup

Directions:

Mix beans, bell peppers, onion, corn, avocado, and cilantro in a large bowl. In a separate, smaller bowl, whisk remaining ingredients and add enough lime juice to make 1/4 cup of dressing. Pour it over the bean mixture, toss it well and adjust seasonings to taste. Makes 2 quarts.
